Adem\u00e1s, contrario a lo que se cre\u00eda en los a\u00f1os 80, no se trata de algo tan sencillo como afirmar que \u201clas grasas saturadas son malas\u201d y \u201clas grasas insaturadas son buenas\u201d.<\/p>\n<p>De hecho, fue este mismo razonamiento extremadamente generalizado lo que casi condujo a la extinci\u00f3n de los aceites tropicales del suministro de alimentos y al auge de los aceites vegetales hidrogenados (grasas trans). Lo cierto es que ni todas las grasas poliinsaturadas son saludables, ni todas las grasas saturadas son da\u00f1inas.<\/p>\n<p>De igual manera se ha producido un cambio en lo que la mayor\u00eda de los expertos coinciden es una proporci\u00f3n m\u00e1s saludable de macronutrientes, es decir de carbohidratos, prote\u00ednas y grasas. La antigua recomendaci\u00f3n de adoptar una dieta baja en grasas y alta en carbohidratos ha sido modificada con el fin de elevar ligeramente el consumo de grasas y disminuir el consumo de carbohidratos, a modo de ingerir un nivel m\u00e1s moderado de ambos.<\/p>\n<p>Aunque la mayor\u00eda de expertos seguir\u00eda estando de acuerdo en que las grasas de origen vegetal \u2013que en su mayor\u00eda son grasas insaturadas\u2013 deber\u00edan constituir la mayor cantidad de grasas que consumimos, algunas investigaciones indican que sustituir completamente las grasas saturadas con grasas poliinsaturadas o carbohidratos puede de hecho empeorar la salud del coraz\u00f3n y elevar el riesgo de padecer enfermedades.<\/p>\n<p>Por lo tanto, como en la mayor\u00eda de las cuestiones de salud y nutrici\u00f3n, el mejor consejo es el equilibrio y la moderaci\u00f3n.<\/p>\n<p>La evidencia m\u00e1s reciente se\u00f1ala que los \u00e1cidos grasos saturados no afectan negativamente la funci\u00f3n endotelial ni aumentan el riesgo de padecer enfermedad coronaria. Las c\u00e9lulas endoteliales revisten el sistema vascular interno y moderan la coagulaci\u00f3n, la adhesi\u00f3n plaquetaria y la funci\u00f3n inmune, adem\u00e1s de controlar los procesos de vasodilataci\u00f3n y vasoconstricci\u00f3n. Incluso la m\u00e1s saludable de las grasas poliinsaturadas se vuelve insalubre una vez oxidada. Esto representa un potencial motivo de preocupaci\u00f3n en la elaboraci\u00f3n de productos procesados que requieren que su tiempo de conservaci\u00f3n en almac\u00e9n sea prolongado.<\/p>\n<p>Adem\u00e1s de ser mucho menos propensas a la oxidaci\u00f3n, las grasas saturadas tienen mayores efectos positivos sobre el colesterol de tipo HDL (colesterol bueno) que las grasas poliinsaturadas, seg\u00fan lo revelan investigaciones recientes.<\/p>\n<p>Probablemente pasen muchos a\u00f1os antes de que las recomendaciones oficiales se pongan a la par de la ciencia en el tema de las grasas saturadas, sin embargo la evidencia es cada vez mayor. Hasta que eso suceda, nuestra misi\u00f3n es la de ofrecer los productos m\u00e1s saludables, de mejor calidad y sustentados en la ciencia moderna.
