Et contrairement \u00e0 nos r\u00e9flexions des ann\u00e9es 1980, tout ne peut pas \u00eatre r\u00e9sum\u00e9 par \u00ab\u00a0les acides gras satur\u00e9s sont mauvais\u00a0\u00bb et \u00ab\u00a0les acides gras insatur\u00e9s sont bons\u00a0\u00bb.<\/p>\n<p>C\u2019est en fait ce mode de pens\u00e9e trop simpliste qui a eu comme r\u00e9sultat la quasi-disparition des graisses tropicales de la cha\u00eene alimentaire et l\u2019explosion des huiles v\u00e9g\u00e9tales hydrog\u00e9n\u00e9es (les acides gras trans). La v\u00e9rit\u00e9 est que toutes les graisses polyinsatur\u00e9es ne sont pas saines, et que toutes les graisses satur\u00e9es ne sont pas malsaines.<\/p>\n<p>Il y a \u00e9galement eu un changement dans ce que les sp\u00e9cialistes s\u2019accordent \u00e0 d\u00e9finir comme un rapport sain de macronutriments entre glucides, prot\u00e9ines et lipides. Elles sont beaucoup moins sujettes \u00e0 l\u2019oxydation et au rancissement. M\u00eame les graisses polyinsatur\u00e9es les plus saines deviennent nocives lorsqu\u2019elles s\u2019oxydent.
