Strawberry Spring Harvest Salad

This simple Strawberry Harvest Salad is one of my summer-time favorites.  It is a delightful fusion of flavors and colors, with the sweetness of ripe strawberries, the peppery kick of arugula, the nutty flavor of sliced almonds, and the tangy flavor of feta cheese.  This wholesome salad contains protein, fiber, vitamins, and minerals to promote a healthy digestive system and support your gut microbiome, keeping your tummy balanced and happy.

Strawberry Harvest Salad Recipe

Makes ~1 serving

Ingredients:

1 cup (250 g) baby arugula

1 cup (250 g) baby spinach

½ cup (125 g) sliced strawberries

1 Tbsp (14 g) feta cheese

1 Tbsp (14 g) sliced almonds (toasted if desired)

Ground black pepper (to taste)

Strawberry vinaigrette (recipe below)

Instructions:

  1. Add arugula and spinach to a bowl.
  2. Top with sliced strawberries, feta cheese, and sliced almonds.
  3. Add strawberry vinaigrette (recipe below) as desired.
  4. Toss to mix.
  5. Season with ground pepper to taste.

Strawberry Vinaigrette

1 cup (250 g) fresh strawberries

2 Tbsp (28 g) apple cider vinegar

2 Tbsp (28 g) extra virgin olive oil

2 Tbsp (28 g) maple syrup (or sweetener of choice)

½ tsp (2.5 g) ground black pepper

Instructions:

  1. Blend strawberries, apple cider vinegar, olive oil, pepper, and maple syrup (or sweetener of choice) together in a blender until smooth.
  2. Store in an airtight container in the refrigerator for up to 5 days.
