From the USANA Test Kitchen: St. Patrick’s Day Green Smoothie

St. Patrick's Day Green SmoothieI understand that a healthy, spinach-filled smoothie is not traditional St. Patrick’s Day food, but sometimes you want to celebrate without all of the calories found in corned beef, shepherd’s pie and soda bread. Not to mention the Guinness.

It seems like almost every holiday, no matter how big or small, really revolves around eating. It can be hard to celebrate without losing sight of your health goals.

Growing up in an Irish family, St. Patrick’s Day was always observed. We didn’t stray from corned beef and cabbage but every once in a while, I would also throw some green food dye into my glass of milk with dinner.  Festive!  If only I’d known about this green smoothie back then.

St. Patrick's Day Green SmoothieNormally, I would say blended spinach wouldn’t be a kid’s first choice, but with the vanilla Nutrimeal™ and fresh pineapple, it tastes more like a milkshake! Your kids will have no idea it’s good for them!

St. Patrick’s Day Green Smoothie (makes 1 large smoothie)

  • 1 banana
  • 1/2 c. fresh pineapple
  • large handful spinach
  • 1/3 c. milk, almond milk or coconut milk
  • 3 scoops vanilla Nutrimeal™
  • ice

Blend all ingredients until smooth.

Great timing for this St Patrick’s Day Smoothie Recipe! I’m going to get the kids involved in making these and do a switch out of something that’s not so healthy!
